Tortellini Soup

Ingredients
- 1 lb ground Italian sausage
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1/2 tsp dried thyme
- 2 pinches red pepper flakes
- 2 cups beef broth
- 1 1/2 tablespoons tomato paste
- 14 oz can fire roasted tomatoes
- 4 cups vegetable or chicken broth
- 10 oz refrigerated tortellini
- 3 cups arugula or spinach
- 1/2 - 3/4 cup grated parmesan cheese

Instructions
- Brown the Italian Sausage with onion over medium heat.
- Turn heat to low and add garlic, basil, oregano, parsley, thyme, and red pepper flakes; cook for 1 minute stirring constantly.
- In a small bowl, whisk the tomato paste with about 1/2 cup of the beef broth. Add the vegetable broth, remaining beef broth, fire roasted tomatoes, and thinned tomato paste. Increase the heat to medium and bring to low boil. Reduce heat to simmer.
- Add tortellinin and simmer 5-10 minutes or until tortellini are cooked to desired tenderness. Remove from heat and stir in arugula or spinach. Add salt and pepper to taste. Sprinkle each bowl with 1-2 tablespoons parmesan cheese.
