Steak Chunks

Ingredients
- 1/2 c flour
- 1 tsp salt
- 1/4 tsp ground black pepper
- 2 Tbsp canola oil
- 2 lb meat (elk, beef, deer) trimmed and cut into 1/2 in cubes
Instructions
- Heat oil over medium heat of large frying pan or electric skillet.
- Combine dry ingredients in a plastic bag. Twist closed and shake to evenly mix.
- Drop 1/4 of prepared meat chunks into flour mixture. Twist bag shut and shake and manipulate to thoroughly coat meat.
- Remove meat a bit at a time, sifting out excess flour, and drop into hot frying pan. Repeat with remaining meat until all has been floured.
- Cook,covered, stirring occasionally and adjusting temperature as needed for 20 minutes or until thoroughly browned. Remove lid while cooking if necessary to cook off extra moisture.
