Rottkohl (Red Cabbage)

  1. Stir together cider vinegar and sugars. Add cabbage; toss to coat. Set aside.
  2. Meanwhile, in a large pot over medium heat, cook bacon until crisp. Remove with a slotted spoon, leaving drippings in pot.
  3. In the drippings, saute apple and onion until tender. Add water and cabbage mixture. Bring to a boil. Reduce heat; cover and simmer for 30 minutes.
  4. Stir in remaining ingredients and crumbled cooked bacon. Simmer, uncovered for 5 minutes. Serves 10.
