Rottkohl (Red Cabbage)

Ingredients
- 1/2 cup cider vinegar
- 1/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 small head red cabbage, shredded
- 2 bacon strips, diced
- 1 medium Granny Smith apple, peeled and chopped
- 1/2 cup chopped onion
- 1/4 cup water
- 2 Tbsp additional cider vinegar
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/8 tsp ground cloves
Instructions
- Stir together cider vinegar and sugars. Add cabbage; toss to coat. Set aside.
- Meanwhile, in a large pot over medium heat, cook bacon until crisp. Remove with a slotted spoon, leaving drippings in pot.
- In the drippings, saute apple and onion until tender. Add water and cabbage mixture. Bring to a boil. Reduce heat; cover and simmer for 30 minutes.
- Stir in remaining ingredients and crumbled cooked bacon. Simmer, uncovered for 5 minutes. Serves 10.
