Potato Salad

  1. In a covered saucepan, boil potatoes in water for 25 to 30 minutes or till tender; drain and cool by replacing cold water in pan every ten minutes.
  2. Peel and cube potatoes. Transfer to a large bowl. Add celery, onion, and pickle.
  3. In a small bowl, combine Miracle whip, celery seed, vinegar, mustard, and salt (and a dash of ground black pepper, if desired). Stir.
  4. Add Miracle Whip mixture to potatoes. Toss lightly. Fold in the chopped eggs.
  5. Cover and chill thoroughly (at least 4 hours). Makes 8 servings
