Potato Salad

Ingredients
- 6 medium (2 lb) potatoes
- 1 cup celery, chopped
- 1/2 cup finely chopped onion
- 1/3 cup chopped sweet and/or dill pickle
- 1 cup Miracle Whip (not light)
- 1 tsp celery seed
- 2 tsp vinegar
- 2 tsp prepared yellow mustard
- 1 1/2 tsp salt
- 2 hard boiled eggs, chopped
Instructions
- In a covered saucepan, boil potatoes in water for 25 to 30 minutes or till tender; drain and cool by replacing cold water in pan every ten minutes.
- Peel and cube potatoes. Transfer to a large bowl. Add celery, onion, and pickle.
- In a small bowl, combine Miracle whip, celery seed, vinegar, mustard, and salt (and a dash of ground black pepper, if desired). Stir.
- Add Miracle Whip mixture to potatoes. Toss lightly. Fold in the chopped eggs.
- Cover and chill thoroughly (at least 4 hours). Makes 8 servings
