Merry Mallow Fudgies

  1. Cream together shortening and sugars until light and fluffy.
  2. Add salt, soda, and vanilla. Beat in eggs.
  3. Mix in flour and cocoa.
  4. Shape a scoop of dough around 2 miniature marshmallows, sealing well.
  5. Roll in granulated sugar (optional).
  6. Place on greased or parchment paper lined cookie sheet
  7. Bake at 400° for 5-7 minutes, just until cookie cracks.
  8. Allow to cool two minutes before removing from cookie sheets.
