Merry Mallow Fudgies

Ingredients
- 1 cup Shortening (or butter)
- 1 cup sugar
- 1/2 cup packed brown sugar
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp vanilla extract
- 2 eggs
- 3 cups flour
- 2/3 cup cocoa
- 1 bag frozen miniature marshmallows
Instructions
- Cream together shortening and sugars until light and fluffy.
- Add salt, soda, and vanilla. Beat in eggs.
- Mix in flour and cocoa.
- Shape a scoop of dough around 2 miniature marshmallows, sealing well.
- Roll in granulated sugar (optional).
- Place on greased or parchment paper lined cookie sheet
- Bake at 400° for 5-7 minutes, just until cookie cracks.
- Allow to cool two minutes before removing from cookie sheets.
