Meatloaf / Meatloaf Minis

Ingredients
- 8 oz tomato sauce
- 3/4 cup rolled oats
- 1 egg
- 1/4 cup chopped onion
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 1/2 lb lean ground beef
Instructions
- Heat oven to 350°
- Combine all ingredients except beef, mix well.
- Add beef; mix lightly but thoroughly. (Overmixing will result in a rubbery texture.)
- Press into 8x4 loaf pan. Bake one hour.
- Let stand 5 mins before slicing.
- For meatloaf minis, spoon meat mixture into muffin tin. Bake at 375 degrees for 20 minutes. Makes 12 meatloaf minis (2 per serving)
