Lemon Squares



  1. Heat oven to 350 degrees.
  2. Grease 8x8" pan.
  3. Beat butter for 30 seconds.
  4. Add 1/4 c sugar and 1/4 tsp salt, beating until fluffy.
  5. Stir in 1 cup flour.
  6. Pat dough into bottom of pan; bake for 15 minutes.
  7. Meanwhile, beat eggs; add remaining 3/4 c sugar, 2 Tbsp flour, lemon peel, lemon juice, and baking powder.
  8. Beat 3 minutes; pour over baked layer.
  9. Bake 25-30 minutes longer or until light golden brown around edges and center is set. Cool.
  10. Sift powdered sugar over top if desired. Cut into squares.
