Lemon Squares
Ingredients
- 6 Tbsp butter
- 1/4 cup sugar
- 1/4 tsp salt
- 1 cup flour
- 2 eggs
- 3/4 c sugar
- 2 Tbsp flour
- 1 finely shredded lemon peel (yellow part only)
- 3 Tbsp lemon juice
- 1/4 tsp baking powder
- to taste powdered sugar

Instructions
- Heat oven to 350 degrees.
- Grease 8x8" pan.
- Beat butter for 30 seconds.
- Add 1/4 c sugar and 1/4 tsp salt, beating until fluffy.
- Stir in 1 cup flour.
- Pat dough into bottom of pan; bake for 15 minutes.
- Meanwhile, beat eggs; add remaining 3/4 c sugar, 2 Tbsp flour, lemon peel, lemon juice, and baking powder.
- Beat 3 minutes; pour over baked layer.
- Bake 25-30 minutes longer or until light golden brown around edges and center is set. Cool.
- Sift powdered sugar over top if desired. Cut into squares.
