Greek Bowls

Ingredients
- 1 lb boneless skinless chicken breasts, cut into very thin strips
- 3 cloves garlic, minced
- 1 Tbsp olive oil
- 1-2 Tbsp lemon juice
- 1 tsp each of cumin, smoked paprika, kosher salt
- 1/2 tsp curry powder
- to taste black pepper
- 2-3 bell peppers, sliced
- some olive oil and salt
- 3/4 cup full-fat plain greek yogurt
- 1/2 cup grated cucumber
- 1-2 Tbsp lemon juice
- 1-2 Tbsp olive oil
- 1 clove garlic, minced
- 1 tsp dried dill
- 1/2 tsp kosher salt
- to taste pepper
- 1 diced cucumber
- 1/2 diced red onion
- 1 cup kalamata olives
- 1 cup feta cheese
- 1/2 cup hummus
- 8 oz spring mix
- 1 box seasoned couscous cooked according to package directions
Instructions
- Preheat oven to 425 degrees. Combine chicken, garlic, olive oil, lemon juice, cumin, paprika, salt, curry, and black pepper and set aside to marinate.
- Combine ingredients 10-17 to make tzatziki sauce.
- On a sheet pan, toss the peppers with olive oil and salt. On a second sheet pan, place chicken pieces in a single layer. Roast both 10-15 minutes until chicken is cooked and peppers are browning.
- Serve all fixings and everyone can build their own Greek bowl.
