Greek Bowls

  1. Preheat oven to 425 degrees. Combine chicken, garlic, olive oil, lemon juice, cumin, paprika, salt, curry, and black pepper and set aside to marinate.
  2. Combine ingredients 10-17 to make tzatziki sauce.
  3. On a sheet pan, toss the peppers with olive oil and salt. On a second sheet pan, place chicken pieces in a single layer. Roast both 10-15 minutes until chicken is cooked and peppers are browning.
  4. Serve all fixings and everyone can build their own Greek bowl.
