German Stollen

  1. Combine 2 c of the flour, the yeast, and cardamom.
  2. Heat milk, 1/2 c butter, granulated sugar, and salt just till warm and butter is almost melted. Add to flour mixture.
  3. Add egg.
  4. Beat at low speed for 1/2 minute.
  5. Mix in raisings, candied fruits and peels, currants, almonds, and orange and lemon peels.
  6. Set mixer to kneading speed, adding flour until dough begins cleaning sides of bowl.
  7. Knead 5 minutes.
  8. Let rise in a warm place until doubled.
  9. Punch down. Divide into thirds.
  10. Cover and let rest 10 minutes.
  11. Roll one third of the dough into a 10x6-inch rectangle. Fold long side over to within 1 inch of the opposite side; seal. Place on a greased baking sheet, and repeat with remaining dough.
  12. Cover; let rise till nearly double.
  13. Bake in a 375° oven for 18-20 minutes or until golden.
  14. Combine powdered sugar, hot water, and 1/2 tsp butter; brush over warm bread. Makes 3 loaves.
