German Stollen

Ingredients
- 4 to 4 1/2 c all-purpose flour
- 2 1/2 tsp active dry yeast
- 1/4 tsp ground cardamom
- 1 1/4 c milk
- 1/2 c butter
- 1/4 c granulated sugar
- 1 tsp salt
- 1 slightly beaten egg
- 1 c raisins
- 1/4 c chopped mixed candied fruits and peels
- 1/4 c dried currants
- 1/4 c chopped blanched almonds
- 2 Tbsp finely shredded orange peel
- 1 Tbsp finely shredded lemon peel
- 1 c sifted powdered sugar
- 2 Tbsp hot water
- 1/2 tsp butter
Instructions
- Combine 2 c of the flour, the yeast, and cardamom.
- Heat milk, 1/2 c butter, granulated sugar, and salt just till warm and butter is almost melted. Add to flour mixture.
- Add egg.
- Beat at low speed for 1/2 minute.
- Mix in raisings, candied fruits and peels, currants, almonds, and orange and lemon peels.
- Set mixer to kneading speed, adding flour until dough begins cleaning sides of bowl.
- Knead 5 minutes.
- Let rise in a warm place until doubled.
- Punch down. Divide into thirds.
- Cover and let rest 10 minutes.
- Roll one third of the dough into a 10x6-inch rectangle. Fold long side over to within 1 inch of the opposite side; seal. Place on a greased baking sheet, and repeat with remaining dough.
- Cover; let rise till nearly double.
- Bake in a 375° oven for 18-20 minutes or until golden.
- Combine powdered sugar, hot water, and 1/2 tsp butter; brush over warm bread. Makes 3 loaves.
