by Sheryl Morris
Ingredients
- 3 eggs
- 1/2 cup margarine
- 1/4 cup warm water
- 1 cup milk
- 4 1/2 teaspoons yeast
- 1 teaspoon salt
- 1/4 cup sugar
- 4 3/4 - 5 3/4 cups flour
Instructions
- Mix 1 1/4 cups flour, sugar, salt, and yeast.
- Combine milk, water, and margarine in a saucepan. Heat until warm. Gradually add to dry ingredients. Beat two minutes at medium speed.
- Add eggs and 1/4 cup flour. Beat at high speed two minutes; scrape bowl occasionally.
- Stir in remaining flour to make a stiff dough. Turn out onto lightly floured board; knead until smooth and elastic, about 8-10 minutes.
- Divide dough in half. Roll each half into a 9-inch square. Cut squares in halves forming 18 triangles.
- Let rise in warm place, free from draft, until doubled in bulk, about 45 minutes.
- Fry in deep hot (400 degree) oil until golden brown on both sides. Drain on paper towel. Sprinkle with confectioners sugar or dip in glaze. Makes 36 doughnuts.
