Corn Bread

  1. Sift together (I sift so I don't end up with lumps of baking powder - a humidity issue) flour, cornmeal, sugar, baking powder, and salt. Set aside.
  2. In another bowl, beat together eggs, milk, and oil. Add dry ingredients. Beat just till smooth (do not overbeat).
  3. Turn into a greased 9x9x2" baking pan. Bake at 425° 20 to 25 minutes. Toothpick inserted in center should come out clean. Serves 9.
