Corn Bread

Ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup sugar
- 4 tsp baking powder
- 3/4 tsp salt
- 2 eggs
- 1 1/4 cups milk
- 1/4 cup cooking oil
Instructions
- Sift together (I sift so I don't end up with lumps of baking powder - a humidity issue) flour, cornmeal, sugar, baking powder, and salt. Set aside.
- In another bowl, beat together eggs, milk, and oil. Add dry ingredients. Beat just till smooth (do not overbeat).
- Turn into a greased 9x9x2" baking pan. Bake at 425° 20 to 25 minutes. Toothpick inserted in center should come out clean. Serves 9.
