Chicken Cordon Bleu

  1. Preheat oven to 325 degrees.
  2. Pound breasts until they are thin. Sprinkle with parsley, salt and pepper.
  3. Top each breast with a slice of cheese, then a half-slice of ham. Roll up tightly and secure with toothpick.
  4. Stir together mayo and water in a shallow dish.
  5. Roll each chicken fillet in the mayo mixture, then in the bread crumbs. Arrange seam-side down in a baking pan.
  6. Bake 20-25 minutes or until browned and cooked through.
