Carrot Cake
Ingredients
- 4 eggs
- 1 c oil
- 3 c finely shredded carrot
- 1 tsp cinnamon
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 2 c sugar
- 2 c flour
Instructions
- Heat oven to 325 degrees.
- Grease and lightly flour cake pans.
- Combine first flour, sugar, baking powder, baking soda, salt, and cinnamon in mixer bowl.
- Add eggs to oil in measuring cup and beat.
- Add carrot, oil, and eggs to flour mixture, beating with electric mixer until combined.
- Beat on medium speed for 2 minutes.
- Turn into pans.
- Bake 50-60 minutes in 9x13 pan or 40 minutes in two 9x9 layers.
- Cool on wire rack for 10 minutes.
- Remove from pans and cool well.
- Frost with cream cheese frosting.
