Carrot Cake



  1. Heat oven to 325 degrees.
  2. Grease and lightly flour cake pans.
  3. Combine first flour, sugar, baking powder, baking soda, salt, and cinnamon in mixer bowl.
  4. Add eggs to oil in measuring cup and beat.
  5. Add carrot, oil, and eggs to flour mixture, beating with electric mixer until combined.
  6. Beat on medium speed for 2 minutes.
  7. Turn into pans.
  8. Bake 50-60 minutes in 9x13 pan or 40 minutes in two 9x9 layers.
  9. Cool on wire rack for 10 minutes.
  10. Remove from pans and cool well.
  11. Frost with cream cheese frosting.
